Analysis of Dried Meat Studies

Introduction
This article presents the results of research on dried meat conducted by the Ekolabos laboratory in 2023. The aim of the study was to investigate the microbiological and physicochemical parameters of various samples of dried meat, including beef, chicken, pork, and turkey. All examined samples of dried meat meet the microbiological safety requirements. No pathogenic microorganisms, such as Salmonella spp. and Listeria monocytogenes, were detected. The low yeast and mold count and absence of Escherichia coli indicate high product quality and proper production and storage processes.
